Corned Beef

Did a slow bake, 2 hrs uncovered, 4 hrs wrapped, 275 degrees. It was good, but unremarkable. Would have rather done a Prime Rib.

I did a small prime rib Saturday night. 3 lbs. I was VERY pleased with the results.
We drive to Mayfield KY and eat at this little catfish joint. They have prime rib on Saturdays as a special. Its the best! My wife said that one was better than theirs! Hell, I almost kissed her for it! lol..
She is a harsh food critic(probably because I make her eat my crazy concoctions) so when she smiles, I know I did good!

We usually just get a 2 or 3 bone roast. Then I carve it off the bones, and BBQ the ribs the next day.
I love ribs. Beef ribs kinda suck though. Hell, I can eat a whole rack myself. But the taste? mmmmmm

I had to stop doing pork ribs for a while. I perfected it and made it every weekend and the wife got tired of it. Lol
 
I do them all the time. 1 large pressure cooker, couple of potatoes, ze corned beef, and 1 head of chopped cabbage.

If room gets tight, lose a potato or some cabbage.

Put in under pressure for 45 minutes then turn heat off til the button drops.

If you're making sandwiches, I'd smoke it in foil with the corn stuff in it.

Put in oven safe cooker with 1" water. 350 deg 1hr/lb. Seemed too long? too hot?
Great sandwiches with Frenchs' regular Old School hardcore yellow mustard only.

I have only done it with the crock pot on low. Don't go over 4 hours with it or it goes dry, even in liquid.

I have some apple, peach and pear trees at the house. I trim them up and I have wood for months.
I use fruit trees for a strong flavor and oak for a milder flavor.

Kingsford (yeah, I know, Blasphemy) has Applewood Briquets. I do a whole chicken split, indirect heat. It really has a nice taste.

what weather said. mix in a little fruit and get a stronger flavor. They sell those bagged chips at the store. That would be perfect to spruce up oak or hickory.

My favorite is lump but kingsford has the best charcoal hands down. Nothing to be ashamed about!
I do split chickens a lot. You should try some country bobs seasoning salt on it. I bet you wouldn't put anything else on it again. Ever!
