Historically, castle moats were outdoor, open-air sewage ditches. Filled with everything stinky and grody you can imagine. Otherwise it's just water and not much of an obstacle. Better solution is simply electrify the fence. Not lethal, but stun gun strength. Enough to paralyze anyone trying to climb over it.
