What employment rights did the P&O ferry workers have that were sacked by text one Sunday night unless they signed new contracts with reduced benefits? it's called fire and rehire so you are talking shit.
The same as every other employed person in the UK. Even if the employer doesn't give you a contract of employment, you are deemed to have at the least the one in law. Same with holiday entitlement, sick pay, Nest pension, minimum wage etc.. Many firms offer extra perks such as higher wages, more holidays, life insurance, company car etc.. to entice better candidates.
Here's the link on P&O -

Doesn't matter if you have the basic contract employment by law, or the best with all the perks, your employer can sack you. They either do it correctly, or like P&O, **** it all up. There are procedures, redundancy payments, lieu of notice etc.. to follow, P&O choose not to do that and were in the shit. That's why there's the Industrial Tribunal process.
Yet again, you are talking shit because you're clueless. I was in management in a large national UK company for 15 years. I left just over 20 years ago, I still keep in touch with the odd colleague. They used to pay over the minimum wage back then by a few quid. Because minimum wage cranked up so much, it basically sets the wage, just the odd employee on slightly more. It's why you're now lucky to see the same face after 6 months.
Unions need banned. £10k extra to train drivers who are on over £60K? You need to shut your mouth and go learn outside of your front door.
