I do not believe that they "SMOKED" the lamb.. I have read some of the writings of the time and got my lamb recipe----nothing about "smoking'-----garlic, coriander and HONEY----it is my regular recipe for leg of lamb------delicious. I am a levite----that is how the LEVITES did it back then. It is true that DRYING meat was a means of keeping it-------strips sorts strung up on the roof
