Why do people eat so fast?

It's because they know that satiety is reached in about twenty minutes. If they eat slowly they won't get to eat as much by the time satiety (satisfaction) is reached. This is the normal pattern of gluttony in America which leads to the desired condition of obesity. :up:

As a teacher I had 55 minutes for lunch, but that included taking down supplies for one class, resetting for another, usually a trip to the office/bathrooms, and I love to take a quick walk after I ate. So I got very used to eating quickly, but not so I could shove a ton of food down my throat. I ate light lunches bc I hated getting sleepy at school!
 
It's part of our biology to overeat, as for 99% human history we have faced food shortages and did not know where our next meal would come from, or when it would come.

Next time you get a big plate of food, only eat half of it. After about 10 minutes you won't want to eat the other half. While you're counting down, you will notice how badly you want to eat more, but eventually you realize you are actually full, and can take the rest home.

I applied for a job with a doctor in Seattle's Chinatown, and he asked me how long it takes me to eat lunch. I replied, "About a half hour". Then he asked me if I could eat lunch in five minutes, and I replied in the negative, and asked him why he was asking me this.

He said, "Old Chinese saying, him who eat fast, work fast".

I thanked him for the interview and left.

I dunno. One job I had we all agreed to a half hour lunch meaning an 8 1/2 hour work day in exchange for getting off early on Friday. Worked great, as we worked far from home and this allowed us to get home sooner and miss the Friday rush hour traffic.

Many state office workers only have a half hour lunch but get off at 4:30 each day.
 
I used to hit the buffet after church with a bunch of other bachelors. Some skinny guys piled their plates high and still went back for seconds. Either they had a very hard physical job or they hadn't eaten all week.
That's my wife. Very active and a metabolism like a furnace.

Even with my terrible habits of youth I was still much healthier than others, even receiving accolades for near perfect attendance throughout grade school. It is only recently that I have discovered one of the reasons. I have a constriction in my throat that forces me to thoroughly chew my food before swallowing. This ensures proper mastication and mixing with sufficient saliva for proper digestion of food. Proper digestion ensures a strong immune system which prevents most illnesses. I have posted this several times here recently. Chew yer food, thank me later. :)

My late husband had something similar. Did you specifically have a harder time with crunchy foods? Hubby had a horrible time being able eat them fast because crunchy foods would choke him.

I grew up with the thought that I wanted to get most meals over with, so I could go out and play. This applied to almost all meals, Breakfast, because I was always lollygagging and would be late for school, Lunch, because we could play in the playground until the afternoon bell rang, Dinner for the obvious reason.

Dinner, always served with seven of us present (I was the youngest). My mother made food for, say, 9 or 10, but we couldn't put extra food on our plate (we boys were always hungry) until our plate was clean, and the oldest got first shot at seconds. I never did.

That's why I got into the habit of eating quickly and I have never really gotten over it. I know it is a bad habit, and causes me to continue eating after I am theoretically "satisfied," but my stomach hasn't sent that memo to my brain in time to stop the overload.

Parenthetically, I am three months into a diet that totally changes my eating habits, losing weight slowly. I've gone from 213 to 186 and still counting.

Even soft foods are difficult to swallow. Even after thoroughly chewing I sometimes need a sip of milk to help it down. I can't take pills of any kind whole. I have to crush them and mix them with something.

I've got a similar problem. Meat seems to be the worst for me. Dr. said I have a 'tortuous' esophagus. Since they looked at it, it seems to be a bit better, but I am always the last to be finished eating.
