I've read a few stories on this.......from what I've read it was supposed to be an opinion essay.

If so, she had a right to her opinion here.

If it's an "opinion essay", you have to support your opinion with valid citations, which opinions based on religion cannot provide since religion is based on "faith" - the belief in things unseen and unproven.

University of Oklahoma junior Samantha Fulnecky has alleged that her First Amendment right to religious freedom is being infringed after her psychology professor gave her an “F” for a paper on the gender norms of middle school students.

Mel Curth, the graduate teaching assistant who graded Fulnecky’s paper, gave the student a failing grade. Curth, who is a trans woman, wrote that the problem was not with the student’s personal views but because her essay “does not answer the questions for this assignment, contradicts itself, heavily uses personal ideology over empirical evidence in a scientific class, and is at times offensive.” A second instructor agreed with Curth’s findings.

After Fulnecky filed a complaint with the school, the right-wing grievance industry went to work.

The TA is a mentally ill tranny. That’s why he/she/it gave a failing grade. Any paper that calls out the tranny nonsense and cites the Bible would make trannys completely lose their shit, and enrage them.

Wrong. The Bible has set the norms for humans for thousands of years.

It’s modern day pseudoscience that is all based on “faith”. Faith in their Big Lie like homosexuality is healthy and that people can change genders.

There is zero science to show anyone can change genders. A man dressing up as a woman and changing pronouns doesn’t make him a woman. He’s just a delusional nut job, a cross dressing homosexual.

Then why does it bother you so much if someone chooses to believe in only two genders? Or to believe in the Bible?

If she had ignored the assignment prompt and written an essay that said only that gender stereotypes are all terrible and should be ignored and are the product of stupid religions and primitive, patriarchal traditions...

... she would have gotten a zero. So no, it has NOTHING to do with her personal opinions on gender.

It has everything to do with he fact that she did not compete the assignment given to her.
