True, that is possible--however, just deleting a text does not remove the history of activity and meta data that is on the phone.
There is usually a history of activity on a phone even if a text is deleted. Deleted messages may still exist in backups or be retrievable through forensic tools, and carriers often retain metadata about the messages for a limited time.

I don't think the cop took her phone to check it or anything. I think she deleted stuff later because of responses she received from posting the stop on TikTok.
