All that I have googled on this issue comes down mainly to the version that they were supposedly indigenous peoples before the Aryan conquest of the subcontinent. I immediately dismiss this version, because firstly, there are no untouchables in the Vedas, and secondly, several peoples live in India, but even those who live in the territory of Aryavarta are not guaranteed to inherit from the Aryans, and apparently only a small part of the Hindus are their direct heirs.

Does anyone know another hypothesis? Why was it considered that they should not be touched, why were they afraid of it?

i know what they are...the caste system has been in existence for how long?
I think that it appeared when the brahmanas seized power, this is approximately the beginning of brahmanism, according to my data, it is about 500 BC

so how long do you estimate it will take for the caste system to die? people are still being killed for romances that break the rules
