... The kraut when fermenting becomes acidic.......that kills any bad bacteria. If it's the idea of the 'scum' that puts you off, don't. It sounds worse than it really is.....

My mom used to do an interesting dish using sauerkraut.
In a large dutch oven dump about 2 quarts of sauerkraut, add about a quart of shredded apple (Granny Smith or similar tart is best), and about a quart of shredded (or sliced broken up into strips) onion (white, yellow, red, your choice). Put a lid on and heat up, just short of boiling.

In a skillet, brown about 4-6 porkchops on both sides, but don't cook through. then ad into the pot of sauerkraut.
Also select about a half dozen or more (tube) sausage; kielbasa, bratwurst, anduoille; or whatever your choice and/or a mix*. Either whole sausage or cut into about 4-6" pieces, (pre-cooked is best). Toss into the pot and let simmer with the rest.

Simmer a couple of hours until everything is warm enough and flavors blended.

Serve a dollop of "kraut" with a chop and sausage atop a pile of mashed potatoes ( or noodles).

* If adventurous and you can find it, consider blood-sausage as part of the mix.
