Risotto is great when right...mush when wrong.
Not that I am lazy...but I prefer to just make a pilaf with Jasmine Rice.

french onion stuffing

fresh fruit cobbler--apple, cranberry--not too sweet. butter, bakery cobbler mix, milk.
