Totally agree! rosemary, parsely, and the number one herb IMO oregano!![]()
I've grown Basil, Oregano, Rosemary, Borage, Parsely, Chives, Echinacea, Cayenne, Mint, Wild Onions, Wild Strawberry, White Chinese Radish, Thyme, Lavender, Rose Hips, and probably others I've forgotten about. I sprinkled them about the feet of other vegetables who were compatible with each other. One of the nicest things was that as you walked the aisles of the garden tending to things, you would get the fragrant aroma of the herbs, especially after watering. It was like they released fragrance back at you in thanks for the watering.
If you ever grow chives, one of the best parts are the purple flowers, don't throw them away! You can eat them fresh or throw a few in your salad for color and flavor. And the wild strawberries, they are a bit of a pain as they all come to season around June, they are small, and do not keep. You have to either eat them fresh or dry them--- either way, the strawberry aroma and flavor are 100 times more intense than the store bought ones! It is like a flavor rush, so intense to almost seem artificial like some strawberry flavored candy or something.
Same goes with other things like carrot tops. Fresh grown carrots are actually SWEET like candy! Nothing at all like the woody crap served in the store. And the tops are best used cooked into the food, stews, etc.
Another great spice is Pequin Peppers. Tiny little hot peppers. I used to both pickle them and dry them; totally different and wonderful flavor compared to other hot peppers, hot, but not too hot, mostly just a really wonderful flavor.
