It's is yummy stuff. When we lived in Idaho I used to bum Rod's motorcyle and cruise the roadside ditches every April and May for the patches that grow wild along the road.Is there any better tasting vegetable?
Good recipe for Asparagus lovers...
Asparagus Linguini
2 T. Butter
1/4 c. onion, chopped
3 cloves garlic, chopped
8 oz. Asparagus, sliced on the diagonal (peel the stems if they are a bit on the large size to get rid of any woodiness)
2 T. dry white wine
2 T. lemon juice
Ground Pepper
5 oz. Linguini, cooked and drained
1/4 c. Parmesan and 3/4 Mozzarella cheese, grated
Cook asparagus till almost done (just don’t make it mushy or the whole meal will be green). Sauté onion and garlic in 2 T. butter till soft
Add warm cooked asparagus to the onions and cook together for a further 2 mins
Add the wine, lemon juice and pepper to taste.
Cook for one more min. mixing gently.
In large bowl mix the cooked pasta with the Asparagus mixture and sprinkle the cheeses over the top.
