That's because it's meant to show topography big enough to actually see. Mt. Everest is 29,000 feet about 5.5 miles against an earth radius of 4,000 miles.
When projected to a 1 foot radius globe you get surface bumps of 0.016 inches.
Or the height of 4 sheets of paper for Mt Everest. The rocky mountains would be 2 sheets of paper.

You would need a magnifying glass to see the topography.
 
If a desktop globe was real. It would take 10 paper towels to soak up all the worlds oceans. And remember 2/3rds of the earth is covered in water.

I've read that somewhere before. Strictly in terms of height, the distance between the lowest and highest points on earth is only about eleven miles or so.
