You are missing Indeependent's standard Talmudic point, that the details aren't covered in the Old Testament. The Talmudic assumption is that people can't think for themselves and therefore every detail must be spelled out as it is in the Talmud.Then why do Kosher butcher's discard the fat and extract the blood from meat?There's also no explanation of how to slaughter an animal or make tefillin.
The Talmudic assumption is that the Jews knew WHAT to do but needed to understand the underlying philosophy in order to make concrete decisions on future matters.
Someone who doesn't learn Talmud doesn't get what it's all about.
Now about how to slaughter a cow...
