Cornbread

I have been on a kick. It's the last of the month, fund and supplies are low...the.pot of beans is on. Yesterday they were plain with cornbread....today they are chilified with cornbread.

I use equal amts of corn meal and flour, salt, baking soda, baking powder, eggs, oil, and water. Yes you should use milk or buttermilk but I'm out. Put three tbsp of lard in a cast iron skillet, heat it on high while you mix up the batter, then put the batter in the hot oil, spread and into the.oven at 375 for about 25 min.
 
LOL I read that wrong, and thought it said equal ants...

I like cornbread. Good cornbread. Not the kind that is so dry it chokes you. Yours sounds like it would be good.
 
It's pretty dry lol but that's what butter and beans are for.
 
The kids are eating it as fast as they can, no complaints so far. My daughter said they made cornbread muffins at her friend's house last nite but they weren't as good lol.
 
The kids.seem to think so, they always bring people for.me to feed at the end of the month!! But that's ok, I made a big pot.
