What possible evidence could the members of the January 6th Committee provide to the Defence? The Defence has to prove that the witnesses being called can provide evidence which would exonerate him. He can't call people who weren't parties to crime, or witnesses to his actions as the crime was ongoing.

You can't call just anybody you want. You have to provide the court with information as to why their testimoney is relevant to your Defence.

Trump tax records were legally obtained. See Supreme Court Decision. Also, the New York AG had probable cause to believe that Trump was evading taxes: (a) Michael Cohen told them so; and (b) Mary Trump learned of the fraud and tax evasion her family pulled to cut her and her brother out of their grandfather's estate.

Once you have probable cause for search warrants you can get documents, and the accomplices start flipping.
