When you are asked to leave a private establishment and you refuse you are trespassing and loitering. Those are crimes you can be arrested for.

Yes, the wise thing to do is to leave, go outside, await the police outside, and state your case to them that the coffee shop may have done something wrong. They will write a report in which can then be taken to a lawyer for review. If there is anything to it, then one goes from there.
To sit there in defiance is never a good idea, because at this point one is tresspassing if refuses to leave. Pride always comes before the fall, and in most cases today there is a pride problem going on in most of this stuff.
My wife gets a Starbucks everyday, so I feel entitled to us their restrooms (I get the cheap stuff at the office). One time when I get off the train and had to piss, I went into the Starbucks like I had for a few times to use the restroom
and then leave. This day there was a line for the restroom so I waited in line. One of the hipster behind the counter told me the bathroom was for paying customers. Instead of insisting it is my right under the law of humans to use their bathroom and ignore what he said to me, I bought a cake pop and then used the bathroom.
If I stayed in defiance, they might have called the cops.
