..how come , on old TV shows, they show a figure 8 bino picture when they are showing what people see through binos--when that is not what you see when looking through binos?

It's symbolic so that the viewer knows that it's the binocular view.

It would be, if you pulled your eyes back away from the eye lenses of the oculars a bit, like where a camera might be. The two fields then can no longer be merged because they are not within the eye point of the Ramsden Disc of the image.
