Need a good FRESH gazpacho recipe!

OK, so I can't ever seem to come up with a good gazpacho.

A lot of recipes call for canned tomato juice. It does make the soup look redder. But it tastes like CANNED tomato juice.

I like a nice soupy gazpacho, and I want it all fresh. But when I make it, it is too thick. it doesn't have enough flavor, the color is too light, and it is frothy. Frothy soup. YUK!

Any suggestions for a good recipe?

Chop up tomato into tiny bits, mash but do not puree the ripe avocado. Add small pieces of onion, and a TINY touch of jalapeno sauce. This for my tastes, some like it fiery.

I'll give it a try. I'll try them all.

Some I've had has had zucchini, but I've never used it in mine. I don't like it fiery either. But I do like it with a little heat!
 
Do you have a Vita-Mix? It's an awesome tool if you like healthy food....

I'll give it a try. I'll try them all.

Have melted pepper jack cheese on hand of course ; )
