Most are wearing up to 4 layers of heavy clothing, the winter coats are thick so a lot who look "fat" are just heavily padded with lots of clothing. Some do have extra built in "insulation".........

In the 2nd picture, what is the armored vehicle on the right? The lack of a turret threw me. Is it real or a mockup mounted on an M-48 chassis?

It's a Stug III. I think it's also from Saving Private Ryan which means it's a replica.
Many of the German BMWs and Kubelwagons are reproductions (not the VW Thing). A company in Texas converts Bugs, trucks, etc into WW II vehicles.
