How do they know what is "prey"???

Surface markers define the bacterium as being not of the body. It's evolutionary, meaning the organism's ancestors met up with this pathogen in the past and passed down "knowledge" to its progeny. The problem comes when a new organism or variation arises which few have encountered in the past, i.e. diseases like covid and ebola. The problem with ebola is, so few people survive that there's no pool of naturally immune individuals.
