why aren't whites refered to as european americans?

Because we aren't referred to as "white" either.

I am described as "a man".

BassV2.0 is described as "a black man".

If there's some valid reason you must know, ask the individual you're conversing with what term he/she prefers. Otherwise, why ask at all? Never mind PC,; there's this quaint little concept called "manners"; perhaps you've heard of it....
