you have to put the butter on melted and let the meat absorb it, then salt and pepper it and let it sit for about ten to fifteen minutes. The meat juices alone will result in a fire, that is what caramelizes the fat and meat around the fat. Nothing wrong with fire. One must watch the steak and let the flame sear the meet. That is the secret. Now, what I do, is then remove from the direct heat and let it sit on the grill away from the fire for four minutes to let the juices accumulate.
