the goot part is Yiddish (for "good"), but the Hebrew word Shabbat is simply being pronounced follow specific understandings of the pronunciation of the vowels and consonants of Hebrew.

Let me try to help you out :

There is a Hebrew word with three letters and specific vowel points. People from different areas and traditions pronounce those consonants and vowels slightly differently. Go ask a Jew from Toronto to pronounce the word and you'll probably hear Shubbis and that's not a hotbed of Yiddish. The fact that when Yiddish was generated, it took some cuntural source words directly from Hebrew. The pronunciation is just an echo of a particular linguistic tradition.

Many Ashkenazik people in the US say Good Shabbos but that does not make the word Shabbos an English word in terms of its source.

To sum - it is a Hebrew word as pronounced, culturally by the people who spoke Yiddish .
