I've decided to mothball my standard menus for the summer, because it's bloody hot here (as Tucson always is in July), and our rainy season is a bit early, so it's also miserably humid.
Instead, I'm looking for main-dish salad recipes which will be lighter and cooler, and also take advantage of the wonderful prices on virtually everything in the produce section of the supermarket. My family is especially fond of superfood-type salads.
Anyone here have some good recipes for easy, filling main dish salads for the summer?
