Trans fats don't occur in nature and the chemical process of hydrogenation is only about a hundred years old.

You don't get it, do you? It's not "elected officials" doing this! It's a bunch of faceless bureaucrats who cannot be fired and are accountable to nobody. They write rules, submit them to the Federal Register and, if nobody objects, they go into effect almost as enforceable as laws enacted by elected officials.
