Serious Question - will Haley win the GOP nomination if Trump "dies" before picking a VP?

If she were to win the White House all of the Obama policies he's going with won't change.

No. She is csmpaigning in New York and Caifornia this week to secure donations, what does that tell you? Even the GOP see the writing on the wall for that brand of GOP candidate. It expired after the 2012 election loss to Obama in a year where Obama was very vulnerable.
