Recipe: A pasta sauce.

All of these can be eyeballed.
-EVOO
-Diced white onion
-Chopped up spicy salami
-Passata (500ml should do it)

1. Cook onion in EVOO until it starts to caramelize.
2. Add the salami.
3. Cook until the salami begins turning the EVOO reddish.
4. Add the passata.

mom started with 2 cans tomato paste and 1 can of tomato sauce. add oregano onions and lots of garlic and let it simmer for hours.

she did not add meat until meatballs at the end.
Did you cook the meatballs in the sauce? Or separately, and then threw them in already cooked?
 
Meat Sauce

Carrots, onion, celery sauteed, 2-3 fresh basil leaves, and only one clove of garlic...which you remove later after its flavor is infused, then brown ground beef, and mix with veggies, add a can of tomatoes paste to the mixture and brown it a little with mixture too, then add 2 cans tomatoes breaking up tomatoes, and 2 cans of crushed tomatoes and a can of tomatoes puree....

I make a big pot.

On the side make your meatballs and brown them, also brown a package of Italian hot sausage....add both to the sauce

You can also brown chunks of pork, and chunks of beef and add to the sauce...(my Italian grandmother and grandfather both did, when making sauce for big Sunday dinners)

Simmer for 3 hours, adding water as it reduces

This is an all day cooking event, when all done the old fashion way of my Italian grandparents...

But it is delicious! And you can freeze it for use later!

mostly like browned in a frying pan (olive oil, of course, say "mostly cooked?"

dad always got 2 meatballs, everyone else got 1. the state of the family economy could be graphed vs meatball size.

Interesting - not a thought I would have made - Salami
Probably won't try it only because Salami is all over the place in flavors depending on who makes it.
Is that a certain brand of Salami or local butcher?

I'm a local butcher sort of guy. All I can really say is to not cheap out on the salami.
