Pintos-n-cheese is a simple and fun Mexican dish containing mashed refried beans, enchilada sauce, and melted cheddar cheese.

This little dish is served in numerous Mexican restaurants as well as the Taco Bell fast food joints.

While pintos-n-cheese is not the ultimate nutrition dish, it is fun and flavorful so if enjoyed in moderation (e.g., not every other day), then it can be a great primer/intro to the colourful world of Mexican cuisine.

This is the sort of dish that is a nice symbol of new age 'pluralism potpourri.'

Pintos-n-cheese is becoming the pluralism substitute for the American hot dog.

If Taco Bell is Mexican cuisine then I shudder at the thought of what is considered crappy Mexican food. lol

Pintos & rice. Starvation rations, it's what third world people eat because there's nothing else and it's what Americans are learning to eat now because our government has made it impossible for us to flourish.
