The Israelis do not disagree with this. ALL people have the Right to Self-Determination and Independence. NOT just the Palestinians. The Jewish people had the Right to Self-Determination when they establish the Jewish State of Israel.
The serious threat is from the Arab Palestinians.
From the Islamic Resistance General Principle and Policies:
◈ The Islamic Resistance Movement “Hamas” is a Palestinian Islamic national liberation and resistance movement. Its goal is to liberate Palestine and confront the Zionist project. Its frame of reference is Islam, which determines its principles, objectives and means.
◈ Palestine, which extends from the River Jordan in the east to the Mediterranean in the west and from Ras Al-Naqurah in the north to Umm Al-Rashrash in the south, is an integral territorial unit.
◈ Palestine is an Arab Islamic land.
◈ Resisting the occupation with all means and methods is a legitimate right guaranteed by divine laws and by international norms and laws. At the heart of these lies armed resistance, which is regarded as the strategic choice for protecting the principles and the rights of the Palestinian people.

Well, --- There is a reason that such decrees in the form of General Assembly Resolutions are not law, not treaty, and/or not binding. It is because the can, as in this case, be contradictory to International Law, and or express a principle or policy that goes beyond the approved "Declaration on Principles of International Law concerning Friendly Relations and Co-operation among States" or that which is expressed within the Charter of the United Nations.
The surprise attack on 7 October 23, likes the tens of thousand of rockets, mortars, or other penetrations of Israeli Sovereign Territory (
like that which precipitated an Armed Response by Israel → since before the turn of the century) falls well beyond that which is covered by binding law or Treaty.
If you want to call an Armed Article 51 Response against a lawless and rogue Islamic Resistance that wants to stretch the sovereign territory of Israel, that is you perogative.

The Hostile Arab Palestinians have no right to interfere with that already established through their Right of Self-Determination and Independence.
If the Hostile Arab Palestinians believe that they have a legitimate grievance, that has not been addressed and answered by the Principle Allied Powers through time and now, then there are peaceful means to settle the dispute. But as it stands, Israel is established and exists under the umbrella of the Montevideo Convention on the Rights and Duties of States. And it is defending itself under the Charter of the United Nations against violent actors in an asymmetrical confrontation, in order to achieve political or religious goals.
IF you wish to make the argument that there is some "external interference" THEN the position can be taken that Israel is under siege by externals forces to unravel its establishment independence under the Right of Self-Determination free from the influences of the Jihadists, Fedayeen Activists, Hostile Insurgents, Radicalized Islamic Followers, and Asymmetric Resistance Fighters originating from the Arab world and unrestrained by the incapable Arab League.

The Arab Leaders (indirectly) benefit from the fact that all the principle designated Arab Palestinian Terrorists are focused on the Israel venue and not creating havoc in the adjacent sovereign nations. Thus they have an interest in allowing the Low Intensity Conflict (Israeli • Palestinian) to continue (maybe) indefinitely as long as the containment does not adversely effect their domestic general population.
