Easy Dinners That Taste Like a Million Bucks

So last night I made Pork Burgundy. Pork tenderloin, season it well, pour in a cup and half of good red wine, add celery and onion if you want. Bake and then add brown gravy mix to the sauce. It's criminally easy....but always tastes amazing.

Who's got recipes like this to share?

Ghetto chili.
Meat..a lb or 2..brown it
2-3 cans of chili beans
Dump that in
Half jar of mild salsa on top. Maybe some corn added
Now here's the crux: You dump the beans and salsa on top of the meat and do not stir.
Cover it and bring it to a boil for 2-3 minutes.
Then you reduce heat and let it come down to simmer for a few minutes,
and stir in about 6 oz of shredded cheese.
Turn it off and it's done.
Serve with corn chips or crackers.

Hog's Ass-N-Hominy (for two people)

A couple ham steaks fried-up in some bacon grease.

Dump a large can of white hominy in the drippings, salt and pepper to taste, and fry till done.

Serve with a couple of spiced apple rings and yeast rolls.

Just cut it in half for one person.

Very simple... and is damn good.
Pork and mashed potatoes

Start the mashed potatoes
Pan fry the pork, put salt and pepper on both sides and brown each side, preferably not totally cooked through. Remove, 1/2 teaspoon of minced garlic, 1/2 teaspoon rosemary, 1/2 teaspoon of sage. Add some olive oil to the pan enough to fry the garlic w/ seasoning until fragrant. Add about 1/2 cup white wine and deglaze the pan, add the pork back in. Cook till about half the wine is gone, that will only be about 2 minutes tops. Add about 1/2 cup cream. Stir in well. Turn off the heat, but leave on hot burner.
Fix your mashed potatoes however you normally do.
Eat it.
The sauce will be rich and herbaceous, little strong on it's own - but with the potatoes and pork it will taste awesome.

I gotta has a lil meat besides the bone in my beans.
 
Super easy, tasty and healthy summer pasta -
Spaghetti
About 6-7 mini cucumbers (no don't substitute with regular cucumbers)
Salt/Pepper
Parmesan
1 lemon
Minced Garlic, or better, 1 clove of fresh garlic crushed.
Red Pepper flakes

Cook he pasta normally.
Cut the ends off the cukes and then cut into matchstix (julienne)
Put a little olive oil in hot pan and stir fry everything but the cheese
The julienne cuckes won't take long, 5 minutes or so, so time it with the spaghetti

Take your spag out, mix it all together and sprinkle how ever much parmesan you like.
Half the lemon and squeeze juice over the plate - option zest the lemon also and sprinkle that on top as well (I always do)

You will like it. On a hot summer day it is especially good, not heavy.

Not healthy - but a crowd pleaser that is super easy.

1 pkg. Rotini Pasta
4 links of Italian sausage
1 pkg medium sharp cheddar (the regular size pkgs, not family size obviously)
Little bit of milk
Options - red pepper flakes, half can of tomato sauce if you like, doesn't really need it.

Prepare pasta as usual
Remove skin from links and grind/chop to bits as you pan fry them, remove some of the excess oil.
When pasta is done, add the whole bag of cheese and stir quickly. Add a little bit of milk at a time till you reach a desired level of creaminess. If you don't, it will be lumpy and sticky. It needs the milk to take the thickness and glom out of the cheese.
Add the sausage and mix together.

Eat it
