God did say he made a mistake when he created man and him changing his mind about the law of Moses is weird to me in the NT
God did not change his mind about the law of Moses. Jesus did not teach this. see Mat 5:17-20

Paul said this because he was publicly embarrassed and confounded by the revelation of Jesus.

He was an agent of the enemy deliberately sent to infiltrate the movement by pretending to be blind and then seeing again among the disciples who knew that Jesus healed a blindness of perception not sight. Paul was a obviously a faker, a mole, a rabid anti Christian zealot, who relentlessly persecuted and killed the followers of Jesus. Once he realized that the revelation of Jesus could not be stopped by violence he claimed to have a vision of Jesus, pretended to be appointed a disciple, and proceeded to contradict Jesus on many issues key to salvation, the law is obsolete, Jesus claimed to be God, etc., for at least three reasons. To insure that any rational person would think that Jesus was insane, foul and loathsome beasts and birds would maintain their lofty positions in the world and continue to lead smooth easy lives off the blood ,sweat and tears of the deceived, and that the Jewish people would never accept Jesus as the only Messiah.

The teaching of Jesus on the figurative language of the prophets and the hidden meaning of the law revealed that people like Paul, who thought they were the highest form of human life, were, in actuality, the lowest, accursed by God himself for eternity. (See Matthew 5:17 and Genesis 3:14)
