    2 cups chopped onion
    1 cup chopped celery
    1 cup chopped bell pepper
    2 tablespoons minced garlic
    3 bay leaves
    1/4 teaspoon cayenne pepper
1 1/2 tablespoons chopped thyme leaves
    1 cup chopped tomatoes
    6 cups water
    2 cups rice
    Salt and pepper

This is my version of Chili's Skillet Queso...so easy and tasty. Just pour contents into glass dish with lid and heat in microwave.
