Funny I was gonna post something similar I came up with.
2 dishes I made with leftover pastrami.
I added some fried up pastrami scraps (like 1inch steak sandwich shreds) to some Chinese cold noodles (ginger peanut sauce) I had made a day earlier. Sometimes you put chicken strips like fahita type strips in the cold noodles but I got creative with frying some pastrami and it worked well together suprisingly.
The other dish was replacing steak with pan fried scraps of Pastrami in my seasoned pan (had sausage fat grease in the pan along with char from the day before covered and refridge=seasoned pan)and made myself a fried pastrami stk hoagie with provolone cheese (not melted) oregano, mayo, lettuce, onion (not fried),tomato on a hoagie roll.
