Duck eggs and crustless quiche.

Omg it was something else. I used duck and chicken eggs, and heavy whipping cream....I cooked it in a pan of water, it was truly like velvet. The next one I'm going to put parmesan in, too, I think. i wilted the spinach first, turned out very pretty. Though the pictures I took don't accurately reflect it.

My all time favorite eggs

poached quail eggs .....with a mound of chewy but cooked thick bacon and croissant . one of my favorites for breakfast and brunch.
these days when i want that i have to make it myself , i did find a place down here that makes a great croissant .

I wilted the spinach in olive oil and salt, set aside to cool/drain
I buttered a one and a half quart pyrex round casserole...

I beat the eggs then added extra heavy whipping cream, maybe a pint and a half? and beat those together
then I added salt, pepper.

I put in chopped sun dried tomatoes and the spinach adn just sort of folded it in. I think there's a trick to adding heavy ingredients so they don't sink...but it worked out pretty good.

Then I crumbled a thing (4 oz?) of chevre in with my fingers gave it an easy stir and poured it into the buttered casserole.

I had the oven at 325 I think

I put a big roaster in the oven put my casserole in it and poured in hot water to about halfway up the side of the casserole.

I don't know how long I cooked it...until it was just slightly jiggly in the middle and then took it out and let it finish.

It turned out super good. I didn't even miss the crust, the outside was a little overcooked because I left it in a couple of minutes too long, so it was firmer than the rest of it and was very like a crust.

It was amazing warm, and it was even more amazing cold.
 
I love quiche. I frequently make a chicken and broccoli one that is out of this world. If you have left over meats or veg it can go into a quiche. Or a strata.

I'm adding parmesan to the next one. I can't decide whether or not I should include mushrooms. If I do the mushrooms, I think I might take out the sun dried tomato..seems like too many ingredients otherwise. And they're all really strong flavors..but maybe that will be good.

You never know.

That sounds heavenly. Gruyère baked into the crust would pair nicely with those flavors as well.

Duck eggs?

Where can I get them in the US?
From people who have ducks?
I get them from the niece of a guy I grew up with who is the nephew of my cousin's husband lolol.

Look on facebook marketplace, people sell them on there.
Ducks don't lay all year round like chickens, though, I imagine they'll slow down pretty soon.

They are wonderful for baking!!!!

They're wonderful for eating, too, they are just like chicken eggs only they have more yolk to white ratio.
