I'll have a order of hors and the prime rib. ;)

Odd thing with the Canvasback duck.....They were so good they damn near ended duck hunting and created the entire migratory waterfowl act all by themselves.

Even today with Canvasback ducks you are extremely limited in how many you can take.

I have the prime rib, sweet potatoes, and for dessert - chocolate eclairs. (Adventurous, I’m not.)

And definitely a hard pass on the sweetbreads.

Yeah, not much on "innards" myself.

Odd thing, my grandmother loved fresh squirrel hearts and livers.....She would not eat the rest.

Not a damn thing. Im not trusting their food handling protocols, and the lack of refrigeration during that time period is even more concerning. :laugh:

SOUP: Consumme Sultane soup

HOR D'OEUVRES: Canape of caviar a la Russe

VEGETABLE: Artichokes Hollandaise

GAME: Game Patty Truffled

ENTREE: Boston gosling stuffed with sweet potato

DESERT: Apple meringue tart followed by Coffee Mousse

BEVERAGE: Cafe Turque

What can I say, I'm a growing boy and need to keep up my strength.
 
Hmmmm.....so many things...... but NOT turtle...that's for sure.
