I don't believe there is another expression so universally mis-stated as "the proof is in the pudding."

The expression, properly rendered, is "the proof of the pudding is in the tasting." Simple enough, right? Pudding can look good, smell good, feel good, but if it don't taste good, it is not good pudding. Hence, the proof of the pudding is in the tasting.

The proof is in the pudding makes no sense whatsoever, unless you are talking about a lost physical object that is claimed to have been hidden in pudding - which is never the case.
