I never soaked my wood.
I don't use chips either.
I cut up some Missouri shag bark hickory, light them up & start grilling.
Guess I've been doing it wrong.I learned this 30 years ago.
If you want to BBQ use log wood,using wet chunks is not BBQing.

I use lump charcoal and soaked chunks.
Don't think I have room in my set up for a log.

You using an offset?I'll use lump charcoal to start my fire and then I'll add some logs to the top of the fire box and let them burn down to coals.
After that I'll add a few logs to keep the temp even.
So not really BBQing.

I'll use Hickory when I smoke pork or turkey..
Depends on what I am making ...
Big stuff in the offset ... Little stuff or chicken thighs for making dog food ... I just build the fire to one side of a smaller grill.

We only use mesquite in my part of Texas. Any other kind of wood will addle your gizzard.

I know it is just personal taste, but I hate mesquite ... To me it tastes like I am chewing on a juniper bush.
But you Texans love the shit out of some mesquite ...

Mesquite is good when used in small amounts.
Normally we use it in it's coal form.
