Only thing it won't have that olive garden adds is Kale... nasty
 
Interesting lineup of meat. I don't think I've ever had such a soup before. The only soup I can think of that I buy at the store in a can that has meat is Chicken and "Italian Wedding" which has meatballs I believe.

Yep, Italian Wedding soup has meatballs in it. One of my favorite canned soups from the store.
 
I did try that but the spinach gets too mushy

The trick is to keep the spinach separate. Then add it to the bowl of hot soup just before serving. That way the spinach wilts, but doesn't get to mushy in the pot (or for left overs).

Oh, and I don't add a lot of spinach, just enough for a little color and texture.

The very concept of tater soup with garlic and Italian sausage in it is repugnant to this Virginian.....What fancy- pants "chef" came-up with that idea?

Oh dude, Italian wedding is a good soup. I know a Cuban around that makes it from scratch.
