Shrimp Gumbo!

I made a pot of it tonight, but I cheated. The Amish dent-n-bent store had some dented cans of something called "Blue Runner Ya-Ya Gumbo Base" for 75 cents, so I bought a few cans of it. The can tops weren't pooched out and the expiration date is 2026, so it was still good. I added some sauteed celery, garlic, green and red bell peppers, onions, and a can of Hunt's fire roasted tomatoes to it, as well as some cayenne pepper, oregano, smoked paprika, thyme, black pepper, and salt. After simmering for 15 minutes, I threw in a 12 ounce package of large shrimp. I would have added some okra, but that stuff's out of season. Served over toasted rice or in my wife's case, riced cauliflower, it was pretty damned good.

Ça c'est bon!

Sounds like it should have been. My only question is whether it might have been better using a larger number of smaller shrimp, or cubing the large shrimp into 2-3 pieces each before throwing in the pot.

No, I like the larger shrimp because their screams of anguish and terror are louder when I pop them in my mouth and chew them up.

Now that does sound excellent, Mr Salt .

Is tinned Okra beneath your dignity when fresh is unavailable ?
A bit more colour perhaps , to avoid it being mistaken for something else .

Overalll , say , 9/10 .

Tried that once, but the canned okra is too soft and turned to mush. Okra should have a little crunchiness to it.

Maybe frozen okra next time.

Actually no, I didn't make it all that spicy. Just enough powdered cayenne pepper to give it a little bite. But I do put a few drops of Tabasco sauce on every spoonful. And I put the shrimps in at the last, and only cooked them until they turn pink., so they melt in your mouth.
