If you like duck, Publix and Walmart (in nashville) sell Maple Leaf Farms duck, and it is awesome

My advice...

Pull out of freezer and put in fridge 5-6 days before cooking - slow thaw it, thoroughly thaw it.

For 5 pounder, 3 hours in the oven at 250 plus a final half hour at 350. Lot of grease, may need to dump the pan 1-1.5 hours in

Inside is neck and other things, I only had the courage to eat the neck. Orange sauce is fire.
 
Had duck once at a fancy restaurant, really liked it. Don't know that I'd try cooking it myself

It takes a long time to cook, great for very cold winter days.

The price ain't bad either. A $25 duck feeds one person for 2+ days of protein.

But it is on the fatty side as a meat, not an everyday meal. These ducks are wild ducks, no roids or antibiotics
