Here in the USA (so all the spam bots know) next week on Thursday we will celebrate Thanksgiving.

Not Thanks to the Indians but to our Creator God and His Agent of Creation Jesus.

It's the most traveled holiday of the year. Meaning more people travel for this holiday than any other holiday. Everyone seeks a hearth and Family to have a sense of home. Vehicle breakdowns, flat tires, overcrowded airports, and jammed highways and grocery stores are the norm starting on Wednesday.

Many will engage in the customary sibling rivalry and old in Family fights. Alcohol only helps loosen tongues to insult and belittle other family members to the point of insanity. Often causing the chief cook to forget the cranberry sauce or Turkey for some insane reason and it will end up burned and dry or left off the buffet entirely.

And in all of this Family love....many people will catch either influenza or Covid. (Someone always will feel the compulsion to attend even if they have a sniffle)

So....

I end this OP with a recording of our initial failures and final success read and explained by Rush Limbaugh (now deceased) as he explains our history as few ever could.

All of this to encourage people

Dont forget to put your frozen Turkey in the fridge today....so it will thaw in an appropriate manner safely. Instead of panic thawing under water on Wednesday night.
 
We put 2 turkets in the smoker. Thats some fine eating right there.
Do you cure them first?
If so want to share the recipe for the brine mix?
 
Thaw well. My son does it now im too old to stay after it all day. I know he puts apple cider, kosher salt, maple syrup, some orange peel. I used to put in some nutmeg but he stopped that part and adds a tad of cinammon. It comes out really moist and delicious. We use mostly cherry chips we make. (He now makes) from our hunting land. Its a whole day of watching temp while usually he is also making some venison dish. Hes a good outdoor cook. Better than me for sure.
 
I worked a sandwich joint in high school. We'd take the frozen turkey slabs and throw them in the sink at night. I wouldn't eat that shit.

Mine is a bit different but not much with Prague powder, salt, maple syrup or brown sugar....of course juniper berries, whole clove, and bay leaf, and I'm drawing a blank on the rest. I think whole mustard seed black peppercorns and other spices. I use an injection needle to pump that brine into every piece and part.

I didn't do a turkey that way last year....instead I just roasted the turkey but I smoked two chickens after I cured them. They tore it up for sure.

Peppercorns are a great add. A little honey is welcome too. Our crowd is old, so theres leftovers galore.

That and a gallon of turkey gravy....
There never seems to be enough gravy for all the leftovers.

I already got my turkey I'm just being silly. 😝
 
Today I knocked out the brioche roll dough and the whole wheat dough.

Then put together the shortbread cookie dough that I use as pie dough for the apple pies.
I went up to the Blue Ridge mountains and got some apples. All total of a bushel but of two separate varieties great for baking.

The two together have made some great pie aleeady...
Ten times better than granny Smith apples.

I peeled, cored and sliced the apples already and then vacuum sealed them up so they would stay fresh.

Tomorrow I got to deal with the butters.

Also need to punch down the doughs. (In the fridge retarding and gaining flavor and extensibility/chewyness.)

Wednesday is when I get really serious and begin proofing and baking everything. I have some sourdough French bread already frozen so I'll just need to pull that out.

Gonna get real up in here....only serious power eaters need apply.
