This is true but the OP is not describing the results of mail ballots but rather early, in person voting. For instance my wife and I went down (in person) to our county courthouse on Thursday and voted.
In many states mail in ballots cannot even be opened and counted until the polls close on election day.

This isn't what the numbers are representing. They are counting votes cast by party registration (of course not the candidate), included are both mail-in ballots and early voting.

You and your wife went down (in person) to your county courthouse and voted - the casting of that vote is included.

If you and your wife had ordered mail-in ballots, cast your ballot, mailed it back and it was received by your local election officials - the casting of that vote would be included also.
