A Simple Supper.....Stuffin' Muffins and Costco Chicken

Wondering what to do with the left-overs from that big-ass Costco chicken?

The wife bought one last week and I sliced off the breast meat and froze half of it.

Today I made Stuffin' Muffins, chicken breast, gravy, with a side of green beans.

Super simple:

Make a one box of Stove Top Stuffing....I amp it up a bit with some chopped onion and use chicken stock instead of water.

Dole it out into a muffin pan (size of your choice) and bake at 400 till crisp on top....I hit the cups with a bit of PAM first.

Take the rest of the chicken stock (from a qt box) and use it to make chicken gravy.

Warm the breast meat a bit and serve with stuffing and gravy.....Sticks to your bones it does.

BTW, they are great for kids, they eat it up!

Great way to do oyster stuffin' too.

LOL, we recently got one of those chickens as well with the same result. My wife has a recipe called Rotisserie Chicken Casserole. She mixes the chopped chicken, rice, fresh green beans, and cream of chicken and cream of mushroom soup ---tops it with bread crumbs or corn flakes and cheese and bakes it to melt the cheese. MMMM. Good. Thanks for the muffin idea---we'll give it a try.

Costco makes a big ass chicken pot pie.....The problem is that there is so much chicken meat in them it soaks up all the gravy. That and it's way too big for just two people and does not reheat well. I guess it would be fine for feeding hired hands. ;)

I agree, LOL, and Costco makes back everything they lose on the rotisserie chickens--Wow, $27 for a 5.5 lb pot pie. We thought about buying one some time ago and came to the same conclusion you did.

Well I had to try it (it was very good) but once the wife brought one home I had to call in reinforcements and I still had some left-over!
 
Looks delicious. That Costco chicken is good for enchiladas too. Their chicken is one of their 'loss leaders' which also includes the prepared food they sell. (Hot dogs etc.)
 
Is this what being married is like? Constantly thinking up ways to eat left-over chicken?
