  • Just a quick note. I adore him. I've seen him live a number of times. He really does slay you. He gives it.
    Henckels and Wusthof to me are about equal... i am a henckles girl. But as with everything.... you will get what you pay for with these knives.... both have lower grade knives and it is apparent in how they preform. Both are stainless blades.... good all purpose blades..... but you can never get a razor sharp edge put on them as you can do with a carbon steel blade.

    With both lines... i prefer the handles without the rivets. They feel rounder in my hand.... a better smother grip. I do not recommend the "eversharp" line that henkles came out with.... i got a few and do not like them as well...they dont keep a fine edge.

    If i were you i would get one goodall purpose knife that you love! I would stick with an 8 or 10 inch one.... and 8 is more all purpose i think though.

    Do you have a sur la table to visit or are you going to order these off the web?

    A good deal about a fine knife is all in the "heft" and feel of the handle and blade.....in YOUR hand. What feels good to me, may not feel as good to you.

    I am not a fan of the Japanese style knife handles.... they feel 'wrong' in my hand... to straight and not a good grip.... they also have the new rage 'santoku' shape, i prefer the classic french style blade. Think of the santoku as a cross between a clever (Chinese style knife) and a french. Its not so much a rocking action to cut as a chop move to cut.... so the mayabi are not for me. They are a fine blade however.
