I learned a lot about cooking meat from my family. Ribs we always did in the oven, and I'm doing them in the oven. I've rubbed with prepared mustard and a dry rub of be sugar, paprika, ranch dressing mix, pepper and garlic. Letting them sit a bit then into the oven low and slow....

We par boil beef ribs then remove, use dry rub and wrap in foil to rest for an hour in the fridge then put on charcoal grill for a few hours away from the direct heat (low and Slow) 1/2 hour before they are done remove the foil and put on the bar b Que sauce , they are fall off the bone . We use a mustard based sauce

Yum, sounds wonderful.
 
BBQ is best but tending it is not what I want to do today.
