Is in the oven. My bff gave me a mess of zucchini...

3 c flour
2-1/2 c sugar
2 c grated zucchini
1c oil
3 eggs
3tsp vanilla
3 tsp cinnamon
1/2 tsp salt
1tsp baking soda
1/4 tsp baking powder

Mix it up slap it into greased loaf land 350 for about an hour

long ago I came on a way to FREEZE zuke------grate----poach in fat
(ie butter or oil) pak in ziplocks and freeze I never tried it

It's definitely the baking time of the year -- temps cooling off, not enough to run heat but enough to not mind the heating effects of the oven. Looking forward to it. :)

I wouldn't know -- Zucchini isn't something I commonly eat or grow (not because I don't like it, just because I don't have enough applications but this is a good one). But I assume I can find it in the store. I'm not aware of any shortages.

And I don't live in Suburbia (eww) -- I'm in the sticks. Woods. Country. The forest primeval.

SET IT AND FORGET IT-------anywhere---------big zukes pop out of a
low lying blob of big leaves------you can also eat the blossoms. No
need to "stake" them-------no need to look at them ------I have no idea
about woodsy predators-------maybe deer like zuke ????

I bet they do, and there's plenty of deer here, as well as rabbits, coons and bears. That's always a consideration gardening here, and ergo more work.

Onliest reason I don't grow Zukes is it's not something I use that often. I grow greens, tomatoes and peppers mostly. Those are utilitarian. And berries, lots of berries.

And somethymes I like to have some fresh herbs you can't buy except in too-big-a-bunch, like parsley.

No this only took about 1/3 of one zuke...I can make probably six more batches
Looks yummy. My neighbor across the street used to make that for me all the time. Then her husband passed away. I haven't seen them since then.
