I used to have chickens. Now, I travel too much to keep animals and I don't like to buy eggs from chicken concentration camps.

tofu scramble:
squish spices into a block of tofu;
2 teaspoons cumin
1 teaspoon thyme, crushed with your fingers
1 teaspoon paprika
1/2 teaspoon turmeric

add chopped onion, garlic, mushrooms, and spinach/chard/kale. Saute in oilive oil.
