Homamade elk chili

1 1/2 pounds cubed elk steak
1 can stewed tomatoes
2 cups water
1/3 cup olive oil
3 cloves garlic
1 large onion, chopped
1tsp ground cummin
1/2tsp sage
1tblspn hatch chili powder
1 tspn salt
2 bay leaves
1 tblspn italian seasoning

(Yes you can use beef. If using beef, do not use the olive oil, use olive oil with elk or venison)
Do not brown meat, combine all ingredients above in large soup pot and boil for 1 1/2 to 2 hours. Skim off about half the oil and discard.

Add:
2 cans stewed tomatoes
1 can tomatillos
3 cans beans(your choice of kind)
{I like 1 can black beans and 1 can each light and dark kidney beans}
(I make it mild because the wife won't eat hot, I just add diced raw serano or jalepeno peppers to my bowl. )
If you want it hot, add 1/4 pound chopped serano or jalepeno peppers, or your favorites at this point.

bring everything to a boil and simmer for 2-3 hours

let cool for 1/2 hour before serving.
Top with chopped onions, cheese or your other favorite toppings.


Break out the tortillas and enjoy.

sound great!!!! I don't know where I have more fun, hunting or eating!!! Don't have elk but might try with some Wisconsin corn-fed venison I have!!! Very tasty!!!!
