A nearby mall has been pruchased by the owners of Mall of America & we have some great stores coming. One is a Corning outlet. They had these little ceramic balls about the size of garbonzo beans used for pies. Can someone explain what they are & how they're used?
 
You put them in an unbaked pie shell before you put it in the oven. It stops the shell from shrinking, and keeps it even all the way around as it bakes.
 
Couldn't you do that by laying another pie plate on it?
 
Yes.. But you won't get the shell to brown properly, and you'll be trapping too much moisture in....
